Natural processing (also called "dry processing") is the oldest and most traditional coffee processing method, especially popular in Brazil. Coffee cherries are sun-dried whole before the beans are extracted, allowing the fruit's natural sugars to infuse into the bean during drying.

    Brazilians coffees are my favorite, and CBC Roasters roasts them just right. A sweeter, smooth taste that is not too acidic.
